Not Linux, but the 8-Bit Guy has the Commander X16 project. The Commodore 64 was the computer that got me fanatical about computers and programming.

If you want better apps than what's possible with electron you should try to promote flutter and it's desktop embedding. The apps are way better than what browsers are able to do with a given set of resources.
